You can use onehanded washing pole's R2's to rollcatch after an L2, L2 combo from the estoc, because washing pole's onehanded r2 is pretty fast and long-reaching. This rollcatch can even work on people rolling backwards. You can do 800 damage on average with this combination even without a buff. Offhand estoc can do it's regular L2's at any time.

Estoc is better against normal enemies as you get critical bonus and you can play much more defensibly. Also if requires less weight. Balder Sword does more upfront damage/scales better, has great moveset and great reach for said moveset. You should go for +5 Enchanted. It's superior to +10 Magic when Int is higher than Str/Dex. from what i understand the buffed options are going to be higher dmg but only for the length of the buff, thats the drawback. so if youre going to faceroll your invasions then buff i guess. for invaders, proabably the way to go.

Don't worry I dont plan to use it for PvP, is just I see it incredibly good for boss fights, it's so quick and burns very low stamina per attack. But I don't understand the hate, Estoc players are R1 spammers, so easy to parry them.
