I've tried with my unob sword that deals 200+ dmg, Tinkers broad axe dealing 400+ dmg, mob masher with sharpness 10, even Morgan with 500+ dmg doesn't do anything. They keep appearing with 4999 health and take no damage. Piglich only spawns in Ancient Pyramid structure in the others (you can get using teleporter pad in the nether with structure compass).
